Ooey Gooey Rice Krispie Treat S'Mores
What's not to like about S'Mores? Chocolate and warm marshmallow smushed between two graham crackers, usually eaten around a bonfire with good friends. "How do you like your marshmallow?" is the question that always ensues. "Lightly toasted? Charred? On fire?"
Whenever we have friends over, we inevitably end up in the backyard around the bonfire. I always keep S'More essentials ready in my pantry to pull out at a moments notice.
The other night we had a couple coming over for dinner and I knew S'Mores were her absolute favorite thing (we talked about it last time they were over around the fire haha). I decided I wanted to take it up a notch and try something new. How could I recreate the already amazing S'More? What would go good with a S'More? .... a Rice Krispie Treat! Brilliance ... I know, I know.
Start by making traditional Rice Krispie Treats but adding in a cup of graham cracker crumbs to the mix (adds the flavor of the graham cracker).
Everyone will be like .... "this Rice Krispie Treat tastes like a graham cracker ... that's amazing." Shhh ... don't tell them it's because there IS graham crackers in it!
Next, the chocolate layer ...
Melt milk chocolate and drizzle over the top of the Rice Krispie Treats. Spread it out so it's a thin layer. While that's cooling, make the marshmallow filling.
I love this Marshmallow Frosting recipe. It's soft and sweet and sticky. Just like a perfectly melted marshmallow.
Now, the only bad part is that after about 12 hours of sitting out this frosting crystalizes and turns totally gross. So you have to eat these Rice Krispie Treat S'Mores within a couple hours of making them. Shouldn't be a problem ...
If you are making them ahead of time, skip the amazing frosting (you can try it later) and just fill the center of the S'Mores with store bought Marshmallow Fluff.
I like to use a Post-It-Note to slice the Rice Krispie Treats so they are all perfectly square.
A graham cracker Rice Krispie Treat drizzled in chocolate and filled with ooey gooey marshmallow frosting ... best. S'More. ever. You're welcome.
Rice Krispie Treat S'Mores 1/4 cupbutter 4 cupsminiature marshmallows 4 1/2 cupscrisp rice cereal 1 cup graham cracker crumbs 3 Hersey's milk chocolate bars
Marshmallow Frosting: 8 large egg whites, at room temperature 2 cups granulated sugar
1/2 teaspoon cream of tartar
1/8 teaspoon fine salt
2 teaspoons vanilla extract
Melt margarine in large sauce pan over low heat. Add marshmallows and stir until melted and well-blended. Cook 2 minutes longer, stirring constantly. Remove from heat.
Add graham cracker crumbs and stir until combined. Add cereal and stir until well coated.
Using buttered spatula or waxed paper, press mixture evenly and firmly in buttered 13 x 9 inch pan. Let cool.
Melt chocolate in a double boiler until just melted. Let cool for a couple of minutes and then pour over Rice Krispie Treats. Spread with a spatula into a thin layer. Let cool completely and then slice into 3 x 3 inch square.
For the marshmallow frosting, fill a medium saucepan with 1 inch of water and bring it to a simmer over medium heat.
Place the egg whites, sugar, cream of tartar, and salt in the clean bowl of a stand mixer and whisk by hand to combine. Nest the bowl over the saucepan, making sure the bottom of the bowl is not touching the water. Heat the egg white mixture, whisking constantly, until the sugar has dissolved and the mixture is hot to the touch (about 120°F on an instant-read thermometer), about 6 minutes.
Transfer the bowl to a stand mixer fitted with the whisk attachment. Turn the mixer to medium and whisk for 1 minute. Increase the speed to high and whisk until stiff, glossy peaks form, about 5 minutes more. Add the vanilla and whisk until just incorporated, about 1 minute.
Spread thick layer of frosting on chocolate side of one Rice Krispie Treat and top with another Rice Krispie Treat, chocolate side down.
Consume within 12 hours as Marshmallow Frosting will crystalize.
You have marshmallow on your face.
