This Summer's IT Cocktail: Pomegranate Mint Spiked Lemonade
My Ultimate (Skinny) Margarita has long been my go-to summer cocktail. It's light and fresh and I haven't met anyone that doesn't like it. This Pomegranate Mint Spiked Lemonade just may rival it. It's my new summer favorite and will be THE cocktail on all my backyard barbecue menus this summer.
I had this spiked lemonade when we were on vaca at High West Distillery in Park City. I loved it so much—I asked the bartender how I could make it at home.
The key to this cocktail (as to all great cocktails in my opinion) is fresh ingredients. Make your own lemonade. It's not hard ... sugar water and fresh lemon juice. It's totally worth it.
I also make my own simple syrup. You just boil equal parts water and granulated sugar in a saucepan until sugar is dissolved. Let cool completely and you've got simple syrup. I always make a big batch of it and store it in a glass bottle in my pantry (it can store for up to one month).
I like to throw a spring of mint into the water while it was boiling and then let it sit in the simple syrup while it cools. It gives the simple syrup a slight mint flavor that is wonderful in this Lemonade cocktail recipe.
Pomegranate Mint Spiked Lemonademakes one drink 1/4 cup fresh squeezed lemon juice 1/4 cup mint infused simple syrup 1/4 cup premium vodka pomegranate juice, lemon wedges and mint leaves for garnish
Fill glass with ice. Pour lemon juice, simple syrup and vodka into each glass. Stir. Top with a splash of pomegranate juice. Garnish with a lemon wedge and a sprig of mint.
