One of our favorite things to eat late summer is Caprese Salad. A simple stack of sliced fresh ripened tomatoes, a thick slice of mozzarella cheese, homegrown basil and a splash of balsamic vinegar and olive oil makes for the perfect light lunch or side to dinner.

Yesterday I was asked to do a cooking segment on News Channel 5's Talk of the Town. I had such a blast and everyone at the station was so incredibly kind and helpful (quickly easing my nerves). Last weekend my girlfriends and I went to Josephine for a girls night and we had the most amazing meal. We ordered several different things on the menu to share and I think the Zucchini and Squash Ribbon Salad was unanimously our favorite dish. It inspired me to go home and make my own version!
