Last weekend my girlfriends and I went to Josephine for a girls night and we had the most amazing meal. We ordered several different things on the menu to share and I think the Zucchini and Squash Ribbon Salad was unanimously our favorite dish. It inspired me to go home and make my own version!
Lunch is always a difficult meal for me to get inspired about. Midday, I want something light yet filling, fresh and satisfying that will last me through the afternoon. Salads are always a good go-to lunch option but most are uninteresting and ultimately unhealthy, which completely defeats the purpose of eating a salad in the first place. East Nashville has become one of Music City's trendiest neighborhoods. Growing up in the Nashville area, I don't ever remember heading over the river into East Nashville and even now when I go I am still unaware of connecting streets. There are a handful of local businesses there now though that are definitely worth the drive. Here are a couple of my absolute favorite East Nashville haunts.
We recently spent a weekend in Boston and it seems like all we did was eat (much like every vacation we go on!)—days filled with oysters, lobster rolls, clam chowders and hot dogs at baseball games. Needless to say, when we got home I was ready to get back into our regular routine of healthy (and simple) eating. I love fine dinning at restaurants but honestly would rather eat a home cooked meal.
