Pretzel Nutella Chocolate Chip Cookie Ice Cream Sandwiches

When I was thinking about ice cream sandwiches, I really wanted to make the ultimate version that contained all my favorite things—salty pretzels, smooth Nutella, cool vanilla ice cream, and, of course, chocolate chip cookies. These are just plain fun and the perfect treat to keep stored in your freezer.

Pretzel Nutella Chocolate Chip Cookie Ice Cream Sandwiches

Makes: about 14 sandwiches

1 cup (2 sticks) unsalted butter, room temperature

½ cup sugar

1¼ cups light brown sugar

2 eggs

3 teaspoons vanilla extract

2½ cups flour

1 teaspoon baking soda

1 teaspoon salt

1½ cups semi-sweet chocolate chips

1 cup crushed pretzels

Flaky sea salt

1 1/2 cups Nutella

6 cups vanilla ice cream

Instructions

Preheat oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat.

In a large mixing bowl, whisk together the butter, sugar, and brown sugar until smooth. Add the eggs and vanilla and beat until combined and creamy. Switch to a rubber spatula and add the flour, baking soda, and salt, and beat until combined. Stir in the chocolate chips and crushed pretzels.

Use a regular cookie scoop to scoop the dough. Place 6 to 8 dough balls onto baking sheet, spaced 3 inches apart.

Place the cookie sheets in the freezer and freeze for about 10 minutes.

Bake for 9 to 10 minutes until the edges of the cookies are crisp and the centers look puffy and slightly underdone. Remove from the oven and sprinkle each cookie with a dusting of flaky sea salt.

Allow them to cool on the baking sheet for 3 to 5 minutes before transferring to a cooling rack. Continue to bake the rest of the cookie dough.

Spread each cooled cookie with a generous amount of Nutella. Then add a scoop of ice cream. Next add the top cookie, Nutella side facing down, and gently push together to adhere. Repeat with the remaining cookies, placing each cookie in the freezer as you work. Eat immediately or freeze, wrapped tightly in plastic wrap, until ready to serve. Remove the ice cream sandwiches from the freezer about 5 minutes before serving.
