12 Days of Christmas: Tomato, Leek and Goat Cheese Frittata
On the sixth day of Christmas my true love gave to me … Six egg frittatas Five golden gifts Four colly chocolate lava cakes Three French Champagne cocktails Two sugar cookie turtle doves and a partridge in a pear tart!
Breakfast on Christmas morning is such a fun tradition. Last year I loved getting up and eating sausage pinwheels and hot chocolate while opening gifts. My in-laws made waffles and I took sausage cheese balls. This year, in honor of the 12 Days of Christmas line "6 geese a-laying," I'm making an egg frittata (with chicken eggs, naturally).
I love this frittata recipe because it is much like a soufflé—beating the egg whites before putting them into the skillet makes them puff up and turns this frittata into a fluffily cloud. I'm also crazy for leeks and goat cheese and when paired with grape tomatoes, it's frittata perfection.
This dish is incredibly easy to make Christmas morning and doesn't require a lot of time in the kitchen (you've got better things to do Christmas morning than cook) yet seems special enough to become a family tradition.
I think that when I make it Christmas morning, I am going to sprinkle a little crisp bacon on top (because everything is better with bacon).
Tomato, Leek and Goat Cheese Frittata(recipe by Martha Stewart) 3 teaspoons olive oil 2 cups sliced leeks (white parts) Coarse salt and ground pepper 1 cup grape tomatoes 6 egg whites 4 egg yolks 4 ounces crumbled goat cheese
Preheat oven to 350 degrees. Heat 2 teaspoons olive oil in 10-inch ovenproof nonstick skillet over medium. Add 2 cups sliced leeks (white parts); season with coarse salt and ground pepper. Cover; cook 5 minutes. Stir in 1 cup grape tomatoes. Cover; cook 2 minutes. Transfer to bowl.
In another bowl, beat 6 egg whites with salt and pepper to stiff peaks. Whisk in 4 egg yolks.
Brush skillet with 1 teaspoon olive oil. Add eggs; sprinkle with vegetables and 4 ounces crumbled goat cheese, pushing slightly under surface. Cook over medium until sides are dry, 3 minutes. Transfer to oven; bake 15 to 20 minutes.
