Layers of homemade chocolate pudding, fresh whipped cream and crushed Oreos in your own individual mason jar. Yep. You can have two.
Jar pies are such a fantastic idea. They are all the goodness of a pie without the serving mess. Screw the jar lid on tight, throw them in a cooler for a day on the boat, a picnic at a music festival or just an easy dessert to pull out of the fridge at home.
These were inspired by a Chocolate Pudding Pie that I made for a cookbook shoot months ago. It had an Oreo crust with a chocolate pudding filling topped with whipped cream. Jacobs loved it but it did not slice beautifully. Because of the pudding, it was more like scooping it out of the pie dish than slicing. So why not skip the mess and layer it more like a trifle?

Chocolate Pudding Oreo Jar Pies
2 ½ cups whole milk
1 cup sugar
¼ cup cornstarch
dash of salt
¼ cup cocoa
1 1/2 cups whipping cream
1/4 cup confectioner’s sugar
1 teaspoon vanilla extract
1 cup crushed Oreos
Heat 2 cups of milk in a saucepan over a medium heat until it starts to bubble around the edges. Mix sugar, cornstarch, salt and cocoa together in a bowl. Whisk in ½ cup milk until no lumps remain. Pour chocolate mixture slowly into hot milk whisking constantly. Bring to a boil, whisking constantly. Remove from heat and cool completely.
While chocolate pudding is cooling, make whipped cream by beating whipping cream in a standing mixer fitted with a whisk attachment. Add confectioner’s sugar and vanilla and whisk until peaks form.
Using 6 small mason jars, place a couple spoonfuls of crushed Oreos in the bottom of each. Then, using a pipping bag, pipe chocolate pudding and then whipped cream into each jar. Repeat process to make layers finishing with crushed Oreos on top of each.
Screw lids on top of each jar and refrigerate at least one hour before serving. Garnish each with an Oreo cookie before serving.
