Brown Sugar and Bourbon PEACH Crisp

I've loved having The Peach Truck set up shop just down the street from my house once a week throughout the summer. Sadly, last weekend was their last for the year (a sign that summer is nearing a close).  Since then, I have been working on recipes to use up all the peaches I bought—not wanting to waste even one.

This recipe feels a little bit like summer and a little bit like fall. Fresh peaches remind me of hot summer days but this rustic cobbler makes me excited for cooler weather. The hint of bourbon and the sweet brown sugar compliment the peaches—add a scoop of vanilla ice cream and it just may become one of your favorites.

Peach Crisp Prep

Brown Sugar and Bourbon Peach CrispPeach filling: 6 ripe peaches 1/2 cup bourbon 2 Tbs. vanilla 1/2 cup sugar 4 tsp. lemon juice 2 tsp. corn starch

Cut the peaches in half, then cut each half into six to eight slices (no need to peel them). Place peaches, bourbon, vanilla, sugar and lemon juice in a large skillet over a medium heat. Cook, stirring constantly until majority of liquid had cooked off. Remove from heat and sprinkle in corn starch, stir until combined. Distribute the peaches evenly in the baking vessel. I like to use individual ramekins (makes serving super simple) but you can also use an oven-proof skillet or baking dish. This recipe fills 4 to 6 ramekins. Set aside and make topping. Topping: 1/2 cup softened butter 1/3 cup dark brown sugar 1 cup flour 1/4 tsp. salt 1/2 cup Old Fashioned oats

Beat butter and brown sugar in an electric mixer until light and fluffy (about 3 mins). Add flour and salt and stir by hand until just incorporated. Add oats and stir by hand until just incorporated. Mixture should be crumbly.

Scatter the crumble topping over the peaches, taking the time to form some of it into small, hazelnut-sized balls. The more imperfect the better!

Bake the crisp until the topping is golden and the fruit is bubbling, 40-35 minutes. Let cool at least 10 minutes. Serve warm or at room temperature with vanilla ice cream.
