Chocolate Coconut Peanut Butter Shake
1 frozen banana
3 Tablespoons creamy peanut butter
2 Tablespoons cocoa powder
2 pitted dates
1/2 teaspoon pure vanilla extract
3/4 cup coconut water
3/4 cup vanilla unsweetened almond milk
1 1/2 cups ice
Put all ingredients in blender and blend on medium until smooth. Add more coconut water if too thick. Optional: Top with Coconut Whipped Cream (recipe below), cocoa powder and unsweetened shredded coconut. Makes 2 servings.
Coconut Whipped Cream
1 (15 ounce) can full-fat coconut milk, cold
1 tablespoon powdered sugar
1 teaspoon vanilla
Flip your cold can of coconut milk upside down and open it. There should be around 1/2 cup of coconut water at the top. Pour this into a container and save for another use. Scoop out the coconut cream and place in a bowl of an electric mixer. Whip the cream for 3 to 5 minutes, until soft peaks form. Beat in the powdered sugar and vanilla.
