Frozen Dark Chocolate Almond Butter Banana Bites

These Frozen Dark Chocolate Almond Butter Banana Bites are the JAM! If you know me at all, you know I have a serious sweet tooth. When I say serious I mean I CRAVE dessert after breakfast, something sweet as a mid morning snack, dessert after lunch, sweets at 2:00 and then of course dessert after dinner ... and then again late at night. I know ... I told you. Addiction.

I have to find things that satisfy without jumping into a pint of ice cream every time I want some sweet. These are it. I made a bunch over the weekend and stuck them in the freezer. With the perfect portion control, just pull one out and your done, they are sweet, cold and crunchy. Addiction fulfilled (without killing my waistline).

They are simple to make in a large batch to freeze and, dare I say, healthy. Bananas - good for you. Almond butter - good for you. Dark chocolate - good for you? Well, they say it's good for you, right? Right!

While you're stuck inside on this snow day, take a few minutes and whip up a batch. You'll be so glad you did when that sweet craving hits.

Frozen Dark Chocolate Almond Butter Banana Bites 3 medium-ripe bananas 1/4 cup almond butter 10 oz. dark chocolate

Melt chocolate over a double boiler stirring constantly until smooth. Remove from heat and let cool slightly. Meanwhile, slice bananas to 1/2 inch thickness. Spread approx. 1/2 teaspoon of almond butter on top of half the slices and sandwich with another slice.

Prepare a baking sheet with a sheet of wax or parchment paper. Using two wooden skewers (or forks) dip one banana-almond-butter-sandwich bite into chocolate and roll around to cover all sides. Use skewers to remove bite from chocolate and place on parchment paper. Repeat until all bites have been dipped in chocolate.

Freeze for at least 3 hours. Keep in freezer for up to one month.
