Popovers

One of nature's great wonders, popovers are made with just milk, eggs, and flour (plus a little butter). Whisk, pour into tins, and bake (no peeking!). A half hour later, you're rewarded with the most incredibly airy and crispy puffs you could ever imagine.

Ever since I tried the incredible (and free, mind you) popovers at M Street's Kayne Prime, I have been trying to make them at home. My first two tries never "popped over" ... I'm still not sure what I did wrong. I came across this Food Network recipe though where you place all the ingredients in a blender and presto! Perfectly crisp on the outside, soft on the inside popovers that made me do a little dance when I saw them through the window of my oven.

Meet my new best friend. Dare I say soul mate? These delicious little puppies are going to be a mainstay in my kitchen and I can't wait to start adding gourmet ingredients in the batter like gruyere and chives, cinnamon and sugar, tomatoes and mozzarella or strawberries. This is just the beginning of a lifelong friendship.

Foolproof Popovers 3 tablespoons melted butter, divided 2 eggs 1 cup milk, warmed for 30 seconds in the microwave (should be lukewarm to warm) 1 cup all-purpose flour 1 teaspoon kosher salt Preheat the oven to 400 degrees F.

Using a pastry brush, coat 8 muffin cups (you do not have to have a pop-over pan) with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes. Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth. Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 35 minutes. Remove from the oven and serve warm.
